A TRADITIONAL GREEK SWEETMEAT: SWEET COOKIES
INGREDIENTS
For 1 kilo
· 400 gr. sugar
· 7 eggs
· 1 kilo flour “FARIN - UP”
· ½ small packet of baking - powder
· 2 vanillas
· 75 gr. milk
· 20 gr. ammonia
· 200 gr. butter milk
1. In a bowl, put the sugar with the yolks of the eggs and beat them well, until the sugar melts.
2. Then, beat the white of the eggs in another bowl, until foamy.
3. Then, in a large bowl, mix the flour with the baking - powder and the vanillas.
4. Boil the milk, dilute the ammonia into it and, then, add them in the flour.
5. Add in the flour the eggs — both of the mixtures — and knead them well.
6. Then, add piece by piece the butter into the mixture and knead them again.
7. Leave the dough for 5-6 hours, to become tight.
8. Shape the sweet cookies in various forms and put them in a large shallow baking pan.
9. Put it into the preheated oven and bake at 200o C for about forty-five minutes, until the cookies swell and become golden.
